Looking at that plate of golden looped onions, and thinking about your lovely father made me feel better about everything. What a wonderful tribute to a remarkable man, who was first and foremost your Dad. Fried onions are love. He filled the house with love. I’m going to fry an onion today in his honor.

Two days a week when my husband and I fast, we routinely depend on the modest onion to provide us a satisfying evening meal. Chopped and caramelized in my mothers’ cast iron pan, tossed with mariachi peppers, bok choy, and eggplant, it is the onion that rules.
